Chana Dal And Brinjal Curry

Ingredients used in Chana Dal And Brinjal Curry
• Slender brinjals - 250 grams.
• Chana dal (soaked) - 1 cup.
• Water - as required.
• Oil - 2-3 teaspoons.
• Onions - 1 numbers.
• Salt - to taste.
• Ginger garlic paste - 1/2 teaspoons.
• Turmeric powder - 1/2 teaspoons.
• Curry leaves - 1 springs.
• Red chilli powder - 1/2 teaspoons.
• Cumin powder - 1/4 teaspoons.
• Coriander powder - 1/4 bunch.
• Garam masala - 1-2 pinch.
• Coriander leaves - 1/4 bunch.
Method:
  • Soaked the Chana Dal in water.
  • Heat oil in a pan, add onions, little salt and saute it.
  • Add ginger garlic paste, turmeric powder, curry leaves, soaked the chana dal, water and cook it for around 5-6 minutes with lid on it.
  • Add slender brinjal, red chilli powder, coriander powder, cumin powder, little salt.
  • Place lid and cook it for 3-4 minutes but dal should not be overcooked, add garam masala and mix nicely. switch off the flame.
  • Atlast add coriander leaves and mix nicely.

Now the Brinjal Chana Dal Curry ready to serve.

Choose only those eggplants (brinjal) which have smooth and glossy skin. The color, no matter what you buy, should be very vibrant. An eggplant that's discolored or has scars and bruises isn't a good option. It shows that the flesh inside the eggplant is damaged or perhaps rotting.

Eggplant or Brinjal is quite low in fats and calories but full of soluble fiber material. It includes good quantities of several necessary B-complex categories of vitamins like vitamin B5, B6, B1, B3
