Ingredients used in VANKAI VEPATUM
• Long brinjals (vankai ,eggplant) - 6-8 numbers.
• Salt - to taste.
• Dried red chillies - 3 piece.
• Onions - 3 piece.
• Ghee /oil - as required.
Method:
  • Take the oil in frying pan and add red chillies and onions (chopped)to it ,keep moving them not making the onions red .
  • Now longitudinally slice the brinjals (vankai ) in a bowl of water as they get brown quickly .
  • Keep adding all the brinjals with a bit of water ( sprinkling only ) so that you get steam to soften the mixture .Add salt to the mixture.
  • Keep the lid on the mixture and keep turning it so that you do not burn it . 20 minutes you get vankai vepatum . the strong smell.
