Recipe of Ridge Guard sabji (maharashtrian style)

Green Chillies 4-5 Small
Onion 1 Large
Ridge Guard Or Turai 2 Stricks
Oil 2 Tablespoons
Salt 1 To Taste
Turmeric 1 Teaspoons

Directions

Scrub off skin of 2 long ridge guards and chop them finely. Heat oil in a pan, add chopped onions, salt, green chillies and jeera. Once onions get slightly transparent, add 1 tspn turmeric and fry for 2 min. Then add chopped ridge guard. Mix well , add little bit of sugar and garam masala ( both optional) and cook on a medium-low flame covered for about 10-15 min with occasional stirring. It will leave water as it cooks and it will leave oil that's when you'll know it's done. Enjoy with phulka

Recipe Tips

Traditionally, one must grate turai, but it's difficult and time-consuming. Hence must be finely chopped to get the similar effect
