Recipe of Stuffed Brinjal

Ingredient Name Quantity Unit
Red Chilli Powder 2 Tablespoons
Salt To Taste
Turmeric Powder 1 Tablespoons
Garlic 6 Clove
Cummin Powder 1 Tablespoons
Corriander Poder 2 Tablespoons
Coconut Powder 1 Cup
Round Brinjals 4 Large
Tamarind Small Piece To Taste (optional) 1 Piece
Curry Leaves - 1 Sprig 1 Bunch


Take 4 large size Brinjals, keep the stem, slit the brinjal into 4 piece. Grind the above ingredients or you can use store bought ready made powders. Tamarind has to be soaked and ground alongwith the other ingredients. Stuff the brinjal with the ground powder (DO NOT MIX ANY WATER). Take a medium size non-stick pan and put some oil and fry these brinjals stir them every 10 minutes and put the remaining gounded powder if any to the curry and let them fry from all sides. REmove from the pan It goes very well with Hot Rice / Sambar Rice / Rasam Rice
