Recipe of stuffed brinjals

Ingredient Name Quantity Unit
Sugar 11/2 Teaspoons
Coriander Powder 1 Teaspoons
Chilli Powder 1 Teaspoons
Garam Masala 1 Teaspoons
Grated Fresh Coconut 3 Tablespoons
Roasted Peanuts Powdered Coarsely 3 Tablespoons
Medium Onions ,finely Chopped 3
Small,round,firm Brinjals 8 to 10 Numbers
Oil 3 Tablespoons
Mustard Seeds 1/2 Teaspoons
Cumin Seed 1/2 Teaspoons
Ginger Garlic Paste 1 Teaspoons
Curd 1/4 Cup

Directions

Wash and clean brinjals. Make 2 slits to form a cross.Leave the stalks intact.Drop them immediately in cold,salt water.Mix the onions,coconut,all dry masalas,curd,ginger- garlic paste well and make a smooth filling.Stuff some of this mixture into each slit of the brinjals.Heat oil add mustard seeds,cumin seeds&wait to splutter,slide in the brinjals slowly.Cover with remaining mixture.Add 2cups of water.Simmer on low flame and cover until done.Stir once or twice in between.Cook till brinjals are tender to touch.
