Ingredients used in Bitter Gourd Paratha
• Oil - as required.
• Bitter gourd (grated) - 3 numbers.
• Salt - to taste.
• Tamarind - 1 tablespoon.
• Roasted chana dal - 1 tablespoon.
• Cumin powder - 1 tea spoon.
• Pepper powder - 1 tea spoon.
• Jaggery - 1 tea spoon.
• Brown onions - 1/2 cup.
• Wheat flour - 1 cup.
• Semolina - 2 tablespoons.
• Ghee - 1 tea spoon.
• Water - as required.
Method:
  • In a pan add oil, grated bitter gourd, salt and saute it well.
  • Take a blender and add tamarind, roasted chana dal and make a powder and keep aside.
  • In a pan add cumin powder, pepper powder, jaggery, blended powder and mix it well.
  • Add brown onions and saute it well and make it into room temperature.
  • Take a bowl add wheat flour, semolina, ghee, water and mix it like a soft dough and rest it for 10 minutes.
  • Now take the dough and roll it with a rolling pin and stuff the bitter gourd mixture and roll it again and cook it both sides with butter or ghee.

Serve it with curd and pickle.
