Ingredients used in Coconut and Egg Curry
• Coconut milk - 1 cup.
• Curry leaves - 7-8 numbers.
• Hot water - 1 cup.
• Tomatoes - 4 numbers.
• Salt - to taste.
• Cumin seeds - 1 teaspoons.
• Ginger - 1 oz.
• Garlic - 4-5 clove.
• Onion - 1 numbers.
• Oil - 1 tablespoons.
• Eggs boiled - 8 numbers.
• Green chillies - 3-4 numbers.
• Garam masala - 1/2 teaspoons.
Method:

1.heat the oil in a pan, fry thenbsp; onion till light brown,then add the garlic, ginger,cumin seeds,seasoning and the tomatoes,cook till the oil separates.keep sprinkling water in case the mixture sticks to the bottom of the pan.

2.then add the eggs, curry leaves and the water; let it simmer on low heat till the gravy thickness.

3.add the coconut milk,green chillies and the garam masala cook for another five minutes.or till the gravy thickness further to the desired consistency.

4.serve hot with boiled rice.
