EGGPLANT RICE

Ingredients used in EGGPLANT RICE
• Oil - 3 tablespoons.
• Garlic - 7-10 clove.
• Green chillies - 3-5 numbers.
• Tamarind - 2-3 grams.
• Eggplant(pieces) - 1-1/2 cup.
• Curry leaves - 2 springs.
• Coriander leaves - 1/2 bunch.
• Salt - to taste.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Dry red chillies - 2 numbers.
• Chana dal - 1/2 tea spoon.
• Urad dal - 1/2 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Cooked rice - 2 cups.
Method:
  • Heat oil in a pan and add garlic, green chillies, tamarind, eggplant, curry leaves, coriander leaves, salt and saute it, later cook for 5 minutes.
  • Keep aside and transfer into blender to make coarse paste.
  • Heat oil in another pan and add mustard seeds, cumin seeds, red chillies, chana dal, urad dal, turmeric powder, eggplant mixture paste and saute it.
  • To it add little water, cooked rice and saute it for 2 minutes.

Now the eggplant rice is ready to serve.

i just cooked and it came out really delicious.! I wonder if your rice was too spicy as I added just 3 green chilli's for 2 cups rice and it was perfect. :) may be 4 should be OK maximum unless u love it to be spicy :)))?
