Ingredients used in Gongura Mutton Biryani
• Basmati rice - 1 cup.
• Mutton - 500 grams.
• Black cumin seeds - 1/2 tea spoon.
• Dagad phool/black stone flower - 1/2 tea spoon.
• Onions (slices) - 1 number.
• Ginger garlic paste - 1 tea spoon.
• Green chilies (chopped) - 3 number.
• Turmeric powder - 1/2 tea spoon.
• Green chilli paste - 1 tea spoon.
• Coriander powder - 1/2 tea spoon.
• Cumin powder - 1/2 tea spoon.
• Red chilli powder - 1 tea spoon.
• Sorrel leaves - 2 bunch.
• Salt - to taste.
• Coconut milk - 1 cup.
• Tomato(chopped) - 1 cup.
• Coriander leaves(chopped) - 1 tablespoon.
• Mint leaves(chopped) - 1 tablespoon.
• Garam masala - 1/2 tea spoon.
• Oil - 1 tablespoon.
• Ghee - 1 tablespoon.
• Fried onions - 1/2 cup.
• Water - as required.
Method:
  • Heat little ghee & oil in a pan, add black cumin seeds, dagad phool, onions, ginger garlic paste, green chilies and saute it.
  • Add turmeric powder, green chili paste, coriander powder, cumin powder, red chili powder, sorrel leaves, a little salt and saute it later cook it.
  • To it add tomatoes, coconut milk, coriander leaves, mint leaves, garam masala and mix it.
  • Add mutton marinated with raw papaya overnight and cook it. Boil water with little salt in another pan and add basmati rice and cook it till it is 80% done.
  • Arrange rice on top of mutton mixture and sprinkle fried onions.
  • Place the lid with rim covered with wheat dough and cook it for 20- 25 minutes.

Now the gongura mutton biryani is ready to serve.
