1.heat 2 tbsp oil in a frying pan; fry the chopped onion till golden brown ;keep it aside.
2.add the rest of the oil to the same pan, deep fry the eggs till the golden brown;put them on paper towel,then cut them into halves lengthwise, arrange them in a shallow serving dish.
3.heat the water in a saucepan; add the sugar and the seasoning, bring it to a boil,then add the vinegar and the tomato sauce; reduce the heat and stir continuosly till the sauce becomes syrupy.
4.remove the pan from heat and pour the sauce directly over the eggs.
5.serve garnished with fried onion and coriander leaves.
