Ingredients used in Mutton Lotus Stem Curry
• Mutton - 250 grams.
• Lotus stem (chopped) - 1 cup.
• Onions (chopped) - 1 number.
• Dry ginger powder - 1 tea spoon.
• Fennel powder - 1/2 tea spoon.
• Kashmiri chilli powder - 1 tablespoon.
• Curd - 1/2 cup.
• Coriander powder - 1 tablespoon.
• Cumin powder - 1/2 tea spoon.
• Coriander leaves (chopped) - 1 bunch.
• Cloves - 3 numbers.
• Cardamom - 2 numbers.
• Cinnamon stick - 1 number.
• Maize - 1 number.
• Bay leaf - 1 number.
• Biryani flower - 1 number.
• Star anise - 1 number.
• Caraway seeds - 1 number.
• Salt - to taste.
• Ghee - as required.
• Water - as required.
Method:
  • Heat ghee in a pan, add whole garam masala spices, chopped onion, little salt and saute it till onions turn slightly transparent.
  • Nowadd mutton pieces and let it cook for 5 to 10 minutes.
  • Then add lotus stem pieces, dry ginger powder, fennel powder, Kashmiri chili powder, curd, cumin powder, corainder powder along with water and cook for about 20 to 25 minutes with closed lid.
  • When oil oozes out of the gravy, add chopped coriander leaves by turning off the flame.

Mutton Lotus Stem Curry is now ready to serve.
