Onions in Tamarind Curry sauce

Ingredients used in Onions in Tamarind Curry sauce
• Coriander powder - 1 tablespoon.
• Chili powder - 1 tablespoon.
• Salt - to taste.
• Turmeric powder - pinch.
• Garlic - 6 clove.
• Chana dal - 1 tea spoon.
• Fenugreek seeds - 1/4 tea spoon.
• Red chilies - 6 numbers.
• Cumin seeds - 1/4 tea spoon.
• Mustard seeds - 1/4 tea spoon.
• Baby onions (peeled) - 500 grams.
• Cumin powder - 1 tea spoon.
• Tamarind juice - 1/2 cup.
• Tomato paste - 2 tablespoons.
Method:
  • Heat oil in a pan, add red chilies, mustard seeds, when mustard seeds is splutter, add cumin seeds, fenugreek seeds, chana dal and saute it.
  • Once chana daal is change the colour, add garlic (crushed or directly), curry leaves, turmeric powder and baby onions, salt, chili powder, coriander powder, cumin powder, tamarind juice, tomato paste, mix it and let it cook with closed lid for 30 minutes on a slow flame.
  • Then serve this with rice.

Chef, what onions do you use? Here I can buy 5 types of onions; the normal yellow ones, the white one, the very very purple ones. shallots and spring onions, but I can never find the slightly purple onions that you use??

At the very end, when the dish was done you had a measured amount of powder that you were going to pour in(?)......was that garam masala?
