Ingredients used in Basque Chicken
• Chicken - 4 lbs.
• Bayonne ham - 6 oz.
• Olive oil - 1/2 cup.
• Tomatoes, crushed - 3-4 numbers.
• Green peppers - 5 numbers.
• Garlic - 4 clove.
• Onions - 2 numbers.
• Salt and pepper - to taste.
Method:
Step 1: Cut the chicken into 10 to 12 pieces. Season with salt and pepper Step 2: Heat 1/4 cup of olive oil in a dutch oven. Put the chicken pieces and brown all sides over high heat. Cover and cook over moderate heat for 15 minutes. Step 3: Peel and seed the green peppers. Cut into large strips. Place the green peppers, ham and garlic in the dutch oven with the chicken. Cook for 20 minutes. Step 4: Peel and seed the tomatoes. Heat 1/4 cup of olive oil in a skillet. Put the onions and cook over moderate heat for 15 minutes. Add the tomatoes and cook 15 minutes more. Step 5: Adjust the seasoning and serve hot.
