Ingredients used in Thai chicken
• Green onion - chopped - 2 tablespoons.
• Cilantro- roughly chopped - 1/4 cup.
• Turmeric - 1 teaspoons.
• Chili sauce - 1 tablespoons.
• Fish sauce - 1 tablespoons.
• Lemongrass (optional) - 2 large piece.
• Kaffir lime leaves - 10-15 leaf.
• Ginger - minced - 2 teaspoons.
• Black pepper - 1 teaspoons.
• Garlic - minced - 1 tablespoons.
• Chicken thighs - 500 grams.
• Salt - 1 pinch.
• Lime (optional) - 1/2 .
• Sugar - 1 teaspoons.
Method:
1. Cut up the chicken thighs into strips. Lightly salt and set aside. 2. In a saute pan or wok, add 1 tbsp of oil and quickly stir fry the lemongrass and kaffir lime leaves. Add the garlic and ginger and stir fry until fragrant. Add turmeric. 3. Add the chicken pieces and stir fry. Add fish sauce, black pepper, and chili sauce. 4. Add sugar and 3 tbsp of water and continue to cook until water evaporates. 5. When the meat is cooked and there is no more liquid, turn off the heat and add the cilantro and green onion and squeeze of half a lime.
