Ingredients used in Chicken long rice
• Chicken broth - 1.5 litres.
• Ginger (crushed) - half number.
• Long rice (soaked and soften) - 1 number.
• Salt - to taste.
• Green onion stalks - 3 numbers.
• Chicken - 1 kg.
Method:
  • Place chicken in a large pot and cover with water.
  • Add ginger and bring to a boil; lower heat and simmer about 45 minutes to an hour or until meat falls away from the bones.
  • Remove chicken from broth and discard bones. Put chicken back into broth and add long rice.
  • Simmer until half broth left.
  • Season with salt and green onions just before serving.

Serve hot.
