Recipe of Quinoa Vegetable Upma

Peas .5 Cup
Carrots 2 Numbers
Onions - Big 1 Numbers
Bell Pepper 1 Numbers
Quinoa 1 Cup
Green Chilies 4 Numbers

Directions

Heat oil in a deep pan about 1tbsp, once hot add mustard seeds, hing. Let the mustard seeds splutter and then add curry leaves, green chilies, urad dhal(1tsp), channa dhal(1tsp), and turmeric. Please add chilies as per your taste buds I add about 6. Add onions, fry till golden brown and then add vegetables and salt. I haven't mentioned the quantities for vegetables since everybody should experiment and figure out how much vegetable you like in this dish. I like more and my husband likes less :) so, finally we have reached a mid way-balanced it out :). Once the veggies are cooked add the quinoa and 2 cups of water and reduce the flame to medium-low. Cover and cook till done. The last 5 minutes uncover and cook if there is too much water left. When hot it looks a little mushy if too much water but don't worry it looks good when semi-hot :) Have it with yogurt!
