Litti along with chokha is a complete meal originated and popular in Indian state of Bihar and Nepalese state of Madhesh; is a dough ball made up of whole wheat flour and stuffed with Sattu. Serve the Litti Chokha along with Aloo Choka and Baingan (Choka) Bharta, Yogurt & Pickled Green Chilies for lunch or dinner.

Ingredients used in Bihari Litti
• Sattu (fried gram flour) - 1 cup.
• Garlic( chopped ) - 4 cloves.
• Ginger (chopped) - 1 number.
• Green chili (chopped) - 2 numbers.
• Coriander leaves - half cup.
• Onion seedsh - half tea spoon.
• Mustard - 2 teaspoons.
• Ajwain - 1 tea spoon.
• Lemon juice - 1 tablespoon.
• Red chili pickle masala - 2 teaspoons.
• Whole wheat flour - 2 cups.
• Water - as required.
• Salt - to taste.
• Ghee - as required.
Method:
  • Mix all the filling ingredients with sattu together nicely (except whole wheat flour).
  • Addlittle water to make the stuffing moist and easy to fill.
  • In a bowl, add wheat flour and water to make a soft dough. Divide dough into equal 8 portions.
  • Dust each ball with dry atta and make a patty roughly 2.5 to 3 diameter in size with hand.
  • Stuff 2 to 3 tsp sattu filling in the center of the patty and close it from all sides.
  • When all the littis are stuffed, pre-heat the oven to 375 F and put all the litties on a foil and bake till one side is brown or black spots come on the litti surface.
  • Then turn over the litti and bake for few more minutes until that side is brown as well.
  • Take out and dip in pure ghee or butter.

Serve with pickleor coriander chutney and/or baigan ka bharta.
