Ingredients used in Enchiladas
• Taco shells(or make one from scratch) - 1/2 numbers.
• Baked beans (from can) - 1 cup.
• Tomatoes - 2 numbers.
• Onion (shredded) - 1 numbers.
• Capsicum (finely chopped) - 1 numbers.
• Cheese - 1/2 cup.
• Mexican hot sauce - 1 cup.
• Butter or oil - 1 tablespoons.
Method:
  • Roll tacos as forenchiladas. Roast them on the griddle, pile up.Keep warm by covering.

  • If made ahead, steam pile a bit to soften enchiladas.

  • Blanch tomatoes in hot water and peel. Mash it.

  • Heat oil in a pan, add onions, stir-fry until tender.

  • Add capsicum and further stirfry for 2-3 minutes.

  • To it, now add tomatoes, simmer for 5 more minutes.

  • Add mexican hot sauce remaining after applying to enchiladas.

  • Add salt to taste, beans, and stuff this inenchiladas. Serve it hot by topping with cheese.
