Ingredients used in Gongura Sweet Corn Mushroom Curry
• Sorrel leaves - 2 bunch.
• Oil - as required.
• Cumin seeds - 1 tea spoon.
• Garlic cloves - 4 number.
• Sweet corn - 1 cup.
• Green chilies - 4 number.
• Curry leaves - 2 springs.
• Chopped tomatoes - 1 number.
• Dry red chilies - 3 number.
• Chana dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Chopped mushroom pieces - 1 cup.
• Salt - to taste.
• Coriander powder - 1 tea spoon.
• Garam masala - 1 tea spoon.
• Crushed onion - 1 number.
Method:
  • Heat oil in a pan, add cumin seeds, garlic cloves, sweet corn, slitted green chilies, curry leaves and saute well.
  • Now add sorrel leaves, chopped tomatoes, cook well and grind it to a coarse paste.
  • Then heat oil in the same pan, add dry red chilies, chana dal, urad dal and saute for about a minute.
  • Add mushroom pieces, salt along with ground sorrel leaves paste and cook it by stirring occasionally.
  • Season with coriander powder, a pinch of garam masala, crushed onion pieces and serve it hot with rice.
