KAKARAKAYA KARAM

Ingredients used in KAKARAKAYA KARAM
• Fresh bitter gourds - 500 grams.
• Red chilli powder - 1/4 cup.
• Salt - to taste.
• Oil - as required.
• Ghee - 2 teaspoons.
• Yoghurt - 1 (1/2) cup.
• Curry leaves - 1 spring.
• Turmeric - half tea spoon.
Method:
  • Clean Bitter gourds thoroughly and remove their edges then cut them into three pieces.
  • In a hot Pan add bitter gourd pieces, Yoghurt, salt, turmeric.
  • Saute it slowly till the Yoghurt totally evaporates.Then transfer them into a plate.
  • Take out the remaining mixture in a plate.
  • Now place another pan on stove and add oil, curry leaves then bitter gourds.
  • Saute them nicely and let them cook on slow flame.
  • Meanwhile blend garlic, chilli powder and salt into a thick paste.
  • When bitter gourd changes its color add this garlic mixture and mix well.
  • Before removing from the flame add ghee to it.
  • This can be served with rice and can be enjoyed for 10-12 days.
