Ingredients used in Lamb Trimmings Fry
• Lamb trimming & offal - 500 grams.
• Red chili powder - 2 teaspoons.
• Green chilies - 5 numbers.
• Oil - 2 tablespoons.
• Curry powder / garam masala powder - 1 tea spoon.
• Pepper (crushed) - 1/2 tea spoon.
• Salt - to taste.
• Garlic (crushed) - 4 numbers.
• Water - as required.
• Mint leaves (chopped) - 1/2 bunch.
• Coriander leaves (chopped) - 1/2 bunch.
Method:
  • Cook the lamb trimmings in the water and keep aside.
  • Heat oil in a pan add green chilies, pieces of trimming, red chili powder, curry powder, crushed pepper, salt, cook it.
  • At last, add crushed garlic, mint leaves, coriander leaves and toss it.

Serve this with cooked rice.

Another dish similar to Greek. We fry with lots of garlic and oregano(&or thyme)allspice,pepper/salt,some paprika and deglaze with wine just enough to loosen from pan. served over prepared rice.
