MIXED VEG CAULIFLOWER POTATO HEALTHY CURRY

Ingredients used in MIXED VEG CAULIFLOWER POTATO HEALTHY CURRY
• Potatoes - 250 grams.
• Green peas - half cup.
• Beans - half cup.
• Tomatoes - 2 numbers.
• Brinjal - 2 numbers.
• Mint leaves - 2 bunch.
• Coriander - 2 bunch.
• Onions - half cup.
• Cauliflower - half cup.
• Oil - as required.
• Red chilli powder - 1 tea spoon.
• Turmeric powder - half tea spoon.
• Salt - to taste.
• Tempering - 4 teaspoons.
Method:
  • Take boiled potatoes and peel it, then mash it.
  • Now add Chopped beans, tomatoes, brinjals, cauliflower, onions.
  • Take oil in a hot pan.
  • Add tempering, then all chopped vegetables-Onions, green peas, brinjal, beans, then finally cauliflower.
  • Take some time and add mashed potatoes, coriander leaves, mint leaves, salt, chilli powder, turmeric powder, some water and let it boil.
  • Once it thickens switch off the flame.
  • Serve with hot rice.
