Ingredients used in Mushroom Capsicum
• Mushrooms - medium cut - 6-8 numbers.
• Capsicum small or half - chopped - 1 numbers.
• Onions - chopped - 1 numbers.
• Cashew nuts - chopped - 2-3 numbers.
• Tomato - medium - prefer raw - 1 numbers.
• Garlic - chopped - 1-2 numbers.
• Ginger - less than half inch - chopped - 1 numbers.
• Chillies - chopped - 1 numbers.
• Cinnamon stick - half inch - 1 numbers.
• Clove - 1 numbers.
• Other spices as per your palate - 1 pinch.
• Curry leaves - 1-2 leaf.
Method:
In a hot sauce pan, add two table spoons of Butter. Followed by Cumin seeds, Cinnamon stick and Cloves and then Ginger, Garlic and Green Chillies. After 2 -3 minutes, add chopped onions and a pinch of salt. Saute them till golden brown. Add Cashew and stir. Add Tomato pieces, fresh coriander powder, pinch of red chilly powder if required, or even crushed pepper would be better. Cover it with lid until onions turn soft - hardly 3-4 minutes would be enough; see that onions don't turn red or darken as we want to maintain the texture and flavour of onions. Add mushroom, stir, check for salt and flavour of spices. Everything is supposed to be mild and flavorful. Add curry leaves at this stage. Cover it with lid until mushrooms turn soft. Once cooked, turn the flame high and add Capsicum. Stir them till Capsicums flavour oozes out. Cover them for another 2 minutes - if you want crunchy capsicum or cover it for long if you like tender capsicum. Garnish and Serve.
