Ingredients used in Olan Coconut milk Curry Leaves Scented Vegetable Stew
• Curry leaves - few springs.
• Coconut oil - 1 tablespoons.
• Coconut milk (thin) - 2 cup.
• Coconut milk (thick) - 1 cup.
• Potato cubed - 1 cup.
• White gourd(elavan) - - 1 cup.
• Green chilies - 2 slice.
• Salt - 1 to taste.
Method:
Cook the white gourd and potato in water and boil add green chillies, thin coconut milk, salt and cook on a low fire for 5 minutes. Pour thick coconut milk, curry leaves and bring to boil once more Pour coconut oil and remove from fire to serve hot. After you add thick coconut milk, see that you just boil it once and remove from fire immediately. some one add balck eyed peas insted of potato but this is the traditional way of olan u can also try variation by avoiding potato and adding black eye peas,yellow pumpkin,zuchhini etc
