Ingredients used in EGG PUDDING
• Sugar - 1 (1/2) tablespoons.
• Vanilla essence or cardomom powder - 1 tea spoon.
• Coconut milk - 1 cup.
• Sugar - 1 cup.
• Egg - 6 piece.
• Lime juice - half tea spoon.
• Water - 2 tablespoons.
Method:
Caramelise sugar: Take sugar and lemon juice in dry pan,heat in ahigh flametill it become brown and melt completely. When it is golden brown in colour add water ,stirr gently in reduced flame till the liquid become thick as honey consistency. Remove from fire and pour into pudding bowl. In separate bowl add beaten egg,coconut milk,and sugar powder,mix it well and pour into the pudding bowl,close with lid,then cook for 20-30 minutes under pressure.garnish with nuts and raisins. Note: Coconut milk shoud be thick,best to use readymade coconut milk, Do not use coconut powder,if u use it ,pudding become hard as cake.
