PUMPKIN SAMBAR UDUPI STYLE

Ingredients used in PUMPKIN SAMBAR UDUPI STYLE
• Chana dal - 1 tea spoon.
• Coriander seeds - 1/2 tea spoon.
• Pepper corn - 10 numbers.
• Dry red chillies - 4-5 numbers.
• Coconut(grated) - 1 teaspoons.
• Oil - 4 tablespoons.
• Mustard seeds - 1/2 tea spoon.
• Fenugreek seeds - 5 numbers.
• Curry leaves - 1 spring.
• Green chillies - 4 numbers.
• Pumpkin(pieces) - 1 cup.
• Turmeric powder - 1/2 tea spoon.
• Salt - to taste.
• Tamarind juice - 1 cup.
• Toor dal - 1 cup.
• Coriander leaves(chopped) - 1 tablespoon.
Method:
  • Take a pan and add chana dal, coriander seeds, peppercorn, dry red chilies and dry roast and transfer into a blender, add finely grated coconut, little water and make a smooth paste.
  • Heat oil in a pan and add mustard seeds, fenugreek seeds, curry leaves, green chilies, pumpkin pieces, and saute it.
  • To it add turmeric powder, salt and mix it, cook for 2-3 minutes with a lid on it.
  • Add tamarind juice, little water and mix it, later cook with a lid on for 3-4 minutes.
  • Add boiled toor dal, smooth paste, salt, simmer it for 3-4 minutes.
  • At last, add coriander leaves and switch off the flame.

Now pumpkin sambar udupi style is ready to serve.

Sambar can be prepared in a number of ways and it is adapted diversely in several states of south India.

 

Sambar recipe is actually a variation of dal recipe in which the dal is combined with different varieties of veggies like drumsticks, lady's finger (okra), bottle gourd, carrots, pumpkin, radish, brinjal (eggplant) etc. Also adding onions and tomatoes together with tamarind pulp to offer some tangy taste to the recipe.

 

Sambar with rice has become the main courses of both formal and daily south Indian food. Also, it is offered with idli, dosa and vada. It's not at all unusual to enjoy sambar rice with appalam
