Round Cucumber With Spinach & Coconut Kootu

Ingredients used in Round Cucumber With Spinach & Coconut Kootu
• Water - as required.
• Cucumber (chopped) - 1 number.
• Spinach (chopped) - 2 bunch.
• Chana dal - 1/2 cup.
• Green chilies (chopped) - 4 number.
• Tamarind pulp - 1 cup.
• Turmeric powder - 1 tea spoon.
• Red chili powder - 1 tea spoon.
• Fresh coconut paste - 1/2 cup.
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Dry red chili - 3 number.
• Garlic - 4 cloves.
• Curry leaves - 3 springs.
Method:
  • Take a pan and add water, chopped cucumber and cook it. And add soaked Chana dal, chopped spinach and cook it well.
  • Add green chilies, tamarind pulp, turmeric powder, red chili powder, coconut paste and cook it well.
  • Now take another pan and add oil, mustard seeds, cumin seeds, dry red chili, garlic, curry leaves and saute it. And transfer into spinach pan and cook it.

Serve with hot rice.
