Ingredients used in SOYA GRANULES VEG PULAO
• Ghee - 2 tablespoons.
• Oil - 2 tablespoons.
• Basmati rice - 2 cups.
• Black cardamom - 1 number.
• Cinnamon stick (1 inch) - 2 sticks.
• Cardamom - 1-2 numbers.
• Star anise - 1 number.
• Bay leaf - 1 number.
• Onions(chopped) - 1/2 cup.
• Ginger garlic paste - 1 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Carrot (cubes) - 1/2 cup.
• Capsicum (cubes) - 1/2 cup.
• Soya granules (washed and strained) - 1 cup.
• Red chili powder - 1 tea spoon.
• Coriander powder - 1/2 tea spoon.
• Cumin powder - 1/2 tea spoon.
• Garam masala powder - 1/4 tea spoon.
• Green chilies (slited) - 2 numbers.
• Yogurt - 1 cup.
• Green peas - 1/2 cup.
• Mint leaves(chopped) - 1/2 cup.
• Coriander leaves(chopped) - 1/2 cup.
• Fried onions - 1/2 cup.
• Bread pieces - 1/2 cup.
• Cashew nuts (fried) - 1/2 cup.
• Saffron strands - 2 pinch.
• Tomatoes (medium) - (8-10) slice.
• Salt - to taste.
• Shah jeera - 1/2 tea spoon.
Method:
  • In a pan, boil water by seasoning with little salt, add soaked basmati rice cook this until it is 90% done.
  • Strain water and remove rice into a plate.
  • Heat ghee with oil in another pan, add black cardamom, shahjeera, cinnamon stick, cardamom, star anise, bay leaf, chopped onions and saute it.
  • To it, add ginger garlic paste, turmeric powder, carrots, capsicum, soya granules, red chili powder, coriander powder, cumin powder, garam masala powder, green chilies, yogurt and mix nicely later cook with the closed lid on it until it is 80% done.
  • To it add green peas,1/4 cup mint leaves, 2/4cup coriander leaves, cook for 2 minutes and check seasoning, later switch off the flame.
  • Divide rice into two portions. In the first portion, add little saffron mixed in water and mix.
  • In the second portion of rice, spread it in a flat bowl as a layer and add cooked vegetable mixture as another layer.
  • On it spread coriander leaves, mint leaves, tomato slices, fried onions, bread pieces.
  • At last, spread saffron rice as a layer and add fried onions, fried cashew nut, coriander leaves.
  • Garnish with mint leaves, lime slice, and saffron strands.

Now Soya granules veg pulao is ready to serve.
