take a pan add oil in it about 3to 4 tbsps.when it got heated add chana dal,urad dal, jeera,dried red chillies,curry leaves,when they are little bit fried add onions,and green chillies,ginger,fry till they become transparent and also add little bit of salt and turmeric powder.now remove from heat let it cool for a while.make it into fine paste without adding oil.now cut the eggplant into small cubes fry them in oil till they become transparent by adding little salt on them.now remove them add the paste into oil fry till it gives nice aroma now add eggplant add little bit salt and add little water slow cook it till it becomes dry.remove from heat. sprinkle on coriander on top.serve with rotis.

Ingredients used in vankaya(egg plant) ullikaram
• Salt - as per taste to taste.
• Cloves,cardamom powder - 1/2 tsp teaspoons.
• Chillies - 3 numbers.
• Onions - 2 large big.
• Ginger - 1 inch quart.
• Dried red chillies - 2 numbers.
• Mustard leaves - 1/2 tsp teaspoons.
• Curry leaves - few leaf.
• Channa dal - 4 tbsp tablespoons.
• Urad dal - 3tbsp tablespoons.
• Eggplant - 3 large big.
• Oil - frying ml.
• Jeera - 1/2 tsp teaspoons.
• Turmeric powder - a pinch pinch.
• Coriander leaves - a small bunch leaf.
