Ingredients used in Achari Mutton
• Oil - as required.
• Mutton - 1 cup.
• Salt - to taste.
• Whole garam masala - 2 number.
• Water - as required.
• Fennel seeds - 1 tea spoon.
• Fenugreek seeds - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Kalonji - 1 tea spoon.
• Onion (chopped) - 1 number.
• Turmeric powder - 1 tea spoon.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1 tea spoon.
• Red chili powder - 1 tablespoon.
• Garam masala powder - 1 tea spoon.
• Curd - 1 cup.
• Mint leaves - 1/2 cup.
• Coriander leaves - 1/2 cup.
• Raw mango pickle - 1 tablespoon.
Method:
  • Heat oil in a pan, add mutton pieces and saute tillthey turn light brown in color.
  • Now pressure cook the sauted mutton pieces till 3 to 4 whistles by adding salt, whole garam masala spices along with water.
  • Blend fennel seeds, fenugreek seeds, mustard seeds, kalonji seeds to a fine powder.
  • Heat oil in a pan, add chopped onions, salt and saute it.
  • Now add turmeric powder, prepared masala powder, coriander powder, cumin powder, red chili powder, garam masala powder, curd, cook for a while, addboiled mutton, give it a mix and cook for about 15 to 20 minutes.
  • Thenadd mint leaves, coriander leaves, raw mango pickle, mix it and cook for about 2 to 3 minutes.

Achari Mutton is now ready to serve.
