This has become one of my favorite recipes too. Thanks so much!! I like it with the long English cucumbers the best, but any kind is good. Also, I have learned to love the hing. At first I couldn't stand the smell and I still have to keep in in a plastic bag, in a jar, so it doesn't smell up my whole cabinet. But, I find I really like the flavor it adds to the dish. Each time I've made it, probably about 10 times now, I 've gotten braver and added more and more. I still add just a little bit - less than 1/8 of a teaspoon.

I've made this several times, and love it. I am getting up the courage to use hing in it too. Thanks!
