Preparation of masala: 1.Add oil in frying pan and heat the oil. Fry coriander,cumin,redchillies and garlic.allow it to cool and make a fine paste in the blender. 2.cut onions in to small pieces and fry them untill they r softened ,allow them to cool and grind to smooth paste in the blender along with the masala paste. 3.Heat oil in a pan.cut the brinjals with the stalk attached .fry the brinjals untill they r completely roasted well.remove them keep a side. 4.Heat oil in a pan and pinch of turmeric and add 1tsp of ginger garlic paste.fry them and immediately add the masala paste along with onion paste fry them untill oil seperates out.add some salt to taste and add the fried brinjals.then saute it untill the masala is completely coated to the brinjals. 5.Enjoy u'r gutti vankaya koora.
