Ingredients used in Gutti Vankaya Koora
• Ginger garlic paste - 1 tea spoon.
• Brinjals - 6 numbers.
• Garlic cloves - 2 numbers.
• Coriander seeds - 3 tablespoons.
• Cumin seeds - 1 tea spoon.
• Redchillies - 5 numbers.
• Onion - 1 large.
• Turmeric - 1/4 tea spoon.
• Salt - to taste.
Method:

Preparation of masala:

  • Add oil in frying pan and heat the oil. Fry coriander,cumin,redchillies and garlic.allow it to cool and make a fine paste in the blender.
  • Cut onions in to small pieces and fry them untill they are softened ,allow them to cool and grind to smooth paste in the blender along with the masala paste.
  • Heat oil in a pan.cut the brinjals with the stalk attached .fry the brinjals untill they are completely roasted well.remove them keep a side.
  • Heat oil in a pan and pinch of turmeric and add 1teaspoon of ginger garlic paste.fry them and immediately add the masala paste along with onion paste fry them untill oil seperates out.
  • Add some salt to taste and add the fried brinjals.then saute it untill the masala is completely coated to the brinjals.
