Sesame Kadai Mix Vegetable Curry

Ingredients used in Sesame Kadai Mix Vegetable Curry
• Capsicum (cubes) - 1 number.
• Onion (chopped) - 1 number.
• Sugar - 1 tea spoon.
• Red chili paste - 1 tea spoon.
• Tomato puree - 150 grams.
• Tomatoes (chopped) - 75 grams.
• Green chillies (chopped) - 4 numbers.
• Turmeric powder - pinch.
• Ginger garlic paste - 1 tea spoon.
• Sesame seeds white - 1 tablespoon.
• Sesame seeds black - 1 tablespoon.
• Cumin seeds - 1 tea spoon.
• Whole garam masala (each) - 2 number.
• Pepper corns - 1 tea spoon.
• Coriander seeds - 1 tablespoon.
• Whole red chilies - 10 number.
• Green peas - 100 grams.
• Carrot (boiled and cut into thin slices) - 100 grams.
• Beans (boiled and cut into thin slices) - 100 grams.
• Potatoes (boiled and cut into cubes) - 100 grams.
• Paneer (cubes) - 100 grams.
• Salt - to taste.
• Coriander leaves (chopped) - 1 bunch.
• Kalonji - 1 tea spoon.
• Onion (cubes) - 1 cup.
• Kasoori methi - 1 tea spoon.
• Oil - as required.
Method:
  • Heat a pan, add whole red chilies, coriander seeds, peppercorns, whole garam masala spices (cardamom, cloves, star anise, cinnamon stick), dry roast them on slow flame.
  • After that, even add black sesame seeds, white sesame seeds, cumin seeds, kasoori methi, kalonji (optional), saute it. Later, put in a blender and make it into a coarse powder.
  • Heat oil in a pan, add chopped onion, salt, cook this till onions are brown.
  • Then add ginger garlic paste, cook till raw flavor is gone.
  • To it, add turmeric powder, half of the made masala, green chilies, chopped tomatoes, tomato puree, red chili paste, cook this with closed lid for 10 minutes.
  • Season it with sugar, diced onion, capsicum along with water and let it cook for 2 more minutes.
  • In the same pan, add boiled green peas, carrot, beans, potatoes, paneer, mix it well, cook it with closed lid for another 4 to 5 minutes, then sprinkle leftover kadai masala, chopped coriander leaves.

Serve this with chapatti, and rice.

It is called kadai   paneer or karahi paneer because the paneer or cottage cheese is cooked in an Indian wok called kadai.

  Kadai paneer is a very popular North Indian Curry made by paneer cooked in a red Indian gravy.  Kadai paneer is one of the easiest tasty Paneer dishes that can be made in minutes. It is a terrific blend of Indian spices combined with gentle pieces of cottage cheese called Paneer. To make kadai paneer, paneer is seasoned, gently spiced and cooked with tomatoes and bell pepper. It is serve along with roti, naan or jeera rice. 

 Two main ingredients, Kasuri Methi (fenugreek leaves) and Whole Coriander Seeds play a vital role as they not only give Kadai Paneer the flavor but also distinct aroma.

 Recipe:

Blend tomato and make it puree.  Add turmeric, kadai masala powder, red chili powder, salt, coriander seeds. Add 1 cup of water and cook for 2-3 minutes. Add water according to the desired consistency.

Add Paneer cubes and cook for almost 5 minutes in the masala. Switch off the stove. At last add kasuri methi and cilantro leaves, Check the seasoning.
