Ingredients used in Amaranth Mutton Fry
• Mutton - 500 grams.
• Amaranth - 1+1/2 bunch.
• Cardamom - 3 number.
• Cloves/lavang - 2 number.
• Star anise - 1 number.
• Bay leaf - 1 number.
• Mace - 1 number.
• Onion (chopped) - 1 number.
• Ginger paste - 1 tea spoon.
• Green chilies (chopped) - 2 number.
• Water - as required.
• Nutmeg (grated) - 1 tea spoon.
• Garlic (crushed) - 4 number.
Method:
  • Roast amaranth leaves in mustard oil and keepaside.
  • Use the same pan to roast whole garam masala spices ( cardamom, cloves, star anise, bay leaf, mace), chopped onions and saute them.
  • Now add ginger paste, mutton pieces, slitted green chilies along with some water and cook till mutton turns tender.
  • Add grated nutmeg, crushed garlic, give it a mix.
  • Transfer the fried amaranth leaves to it and cook till oil oozes out of the gravy.

Delicious Amaranth Mutton Fry is now ready to serve.
