Beet and Barley Broth with Chicken

Ingredients used in Beet and Barley Broth with Chicken
• Chicken - 100 grams.
• Garlic (finely chopped) - half tea spoon.
• Onions (chopped) - 1/4 cup.
• Coriander stems - 5-6 numbers.
• Spring onions green (chopped) - 2 teaspoons.
• Barley grains (soaked) - 1 cup.
• Tomatoes (chopped) - half cup.
• Carrot (chopped) - half cup.
• Beetroot (chopped) - 1 cup.
• Salt - to taste.
• Oil - half tea spoon.
• Water - as required.
Method:
  • In a pressure cooker, add oil, finely chopped garlic, chopped onions, spring onions, coriander stems, and saute it for a minute.
  • Then add soaked barley grains and cook for few minutes.
  • In it, add chopped tomatoes, carrot, beetroot, salt (to taste) along with 2 cups of water and let it cook with closed lid till 4 vessels on a low flame.
  • At last, add chicken pieces, dill leaves, and cook for another 10 minutes.

DeliciousBeet and Barley Broth with Chicken is now ready to serve.

Hi Sanjay, very nice recipe. What substitution would you recommend for a vegetarian version ? Would firm Tofu work well ? Since this is a meal by itself, I would like to get some protein into it without any meat. Thanks.?
