BEETROOT AND BARLEY BROTH

Ingredients used in BEETROOT AND BARLEY BROTH
• Oil - 1 tea spoon.
• Garlic(chopped) - 1/2 tea spoon.
• Coriander stems - 2 springs.
• Spring onions(chopped) - 1 tablespoon.
• Barley grains (soaked) - 1/2 cup.
• Tomatoes(chopped) - 2 numbers.
• Carrot(chopped) - 1 number.
• Beet root(chopped) - 1 cup.
• Salt - to taste.
• Water - as required.
• Chicken - 100 grams.
• Dill leaves(chopped) - 1 tablespoon.
• Onion (chopped) - 1 number.
Method:
  • In a pressure cooker add oil, finely chopped garlic, chopped onions, spring onions, coriander stems, barley grains, and roast them for few minutes.
  • Add chopped tomatoes, carrot, beetroot, salt, water and put the lid on and cook till 4 vessels on a low flame.
  • Now add chicken pieces, dill leaves, and cook for another 10 minutes and serve hot.

Hi Sanjay, very nice recipe. What substitution would you recommend for a vegetarian version ? Would firm Tofu work well ? Since this is a meal by itself, I would like to get some protein into it without any meat. Thanks.?
