BRINJAL POTATO CAPSICUM FRIED RICE

Ingredients used in BRINJAL POTATO CAPSICUM FRIED RICE
• Chana dal - 1 tablespoon.
• Coriander seeds - 1 tea spoon.
• Dry red chilies - 4 numbers.
• Pepper corns - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Tarmarind - 2-3 pieces.
• Green chilies - 5 numbers.
• Onion - 1 number.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Curry leaves - 2 springs.
• Potatos - 2 numbers.
• Red capsicum - 1 number.
• Green capsicum - 1 number.
• Oil - 2 tablespoons.
• Salt - to taste.
• Peanuts - 1 tablespoon.
• Big brinjal(chopped) - 1 number.
• Rice(boiled) - 2 cups.
Method:
  • Take a pan and add peanuts, channa dal, coriander seeds, dry red chilies, peppercorns, urad dal, tamarind and mix it. Saute all these nicely for 5 minutes.
  • Then take an electric blender and add those ingredients, make a fine powder and keep aside.
  • Take a pan heat oil then add mustard seeds, cumin seeds, curry leaves, chopped potato, turmeric powder, saute all these nicely for few minutes.
  • Then add chopped brinjal and let it fry for few minutes.
  • Now add chopped green chilies, chopped onion, chopped red and green capsicum.
  • Add the mixture powder we already prepared at the start, toss it well then add boiled rice and toss again.

Serve fried rice with curd.
