BUTTERNUTSQUASH OR PUMPIN CURRY

Ingredients used in BUTTERNUTSQUASH OR PUMPIN CURRY
• Mustard seed - half tea spoon.
• Oil - 2 tablespoons.
• Tamarind - 1 pinch.
• Coriander powder - 1 tea spoon.
• Turmeric - half tea spoon.
• Chilli green - 2 numbers.
• Cumin seed - 1 tea spoon.
• Coconut - 1 cup.
• Butternutsquash - half number.
• Curry leaves - 6 numbers.
• Red chilli - 2 numbers.
Method:
  • Boil butternutsquashwith salt and turmeric until cooked.
  • Grind together coconut, coriander powder, jeera, chilli.
  • Add this paste to bsquash. soak tamaring in water.
  • Squeeze it and take the water around 1/2 cup add to the butternutsquash.
  • Add it to the curry. Let it boil together for few mins until the gravy becomes litle thick. Lastly heat oil add mustard, curry leaves, red chilli and pour this into curry. it goes well with rice.
  • This curry can be made with arbi and tomatoes too.

If youare making it with tomato hen do not add coriander powder.
