Ingredients used in Chicken Ghee Roast Masala
• Chicken boneless - 1 cup.
• Chicken bones - 3 number.
• Dry red chilies - 3 number.
• Cloves - 3 number.
• Cardamom - 2 number.
• Cinnamon stick - 1 small.
• Mace - 1 number.
• Bay leaf - 1 number.
• Biryani flower - 1 number.
• Star anise - 1 number.
• Caraway seeds - 1/2 tea spoon.
• Fennel seeds - 1/2 tea spoon.
• Cashew nuts - 5 number.
• Desiccated coconut powder - 1 tablespoon.
• Onion (chopped) - 1 number.
• Salt - to taste.
• Ghee - as required.
• Curry leaves - 2 springs.
• Turmeric powder - pinch.
• Tomato puree - 1/2 cup.
• Green chilies (chopped) - 2 number.
• Lemon juice - 1 tea spoon.
• Ginger garlic paste - 1 tea spoon.
• Coriander leaves (chopped) - 1 bunch.
Method:
  • Prepare a stock of boneless chicken pieces and chicken bones. (By boiling them in water)
  • Now transfer the bone chicken pieces to a plate and grind the boneless chicken pieces.
  • Dry roast red chilies, whole garam masala spices (cinnamon stick, cloves, cardamom, peppercorns, shah jeera, biryani flower, mace), fennel seeds, cashew nuts, desiccated coconut powder and blend themto a coarse powder.
  • Heat ghee in a pan, add curry leaves, chopped onion and sauté till onionsturn slightly transparent.
  • Then add turmeric powder, ginger garlic paste, cook it till no raw flavors exist.
  • Now add the coarsely grinded chicken and stir fry for about 10 minutes.
  • Then add tomato puree,green chili pieces, chicken stock and cook themfor about 15 minutes.
  • When ghee oozes out of the gravy,sprinkle 1 teaspoon of lemon juice, chopped coriander leaves.

Chicken Ghee Roast Masala is now ready to serve.
