- Heat oil in a pan add red chillies, chana dal, coriander seeds saute it for 5 minutes.
- In a blender add garlic cloves, onions in this add red chilli, coriander seeds, chana dal make it into a coarse paste.
- Heat a pan add oil once it hot add eggplant pieces, salt, prepared red chilli and coriander paste mix it well cook this for 5 minutes with the lid on.
- After 5 minutes open the lid and cook it for 2 more minutes then switch off the flame.
Serve with sambar rice or curd rice or chapatti.
