Ingredients used in FISH RICCARDO
• Cloves - 4 number.
• Cinnamon (1 inch) - 1 stick.
• Coriander seeds - 1/4 tea spoon.
• Cumin seeds - 1/4 tea spoon.
• Garlic - 5 cloves.
• Pepper corns - 1/2 tea spoon.
• Fried onions - 1/4 cup.
• Turmeric powder - 1/4 tea spoon.
• Sugar - 1/4 tea spoon.
• Tamarind pulp (soaked) - 2 piece.
• Salt - to taste.
• Lime juice - 1 tablespoon.
• Red chili paste - 1/2 tea spoon.
• Tomato ketchup - 1/2 tea spoon.
• King fish - 1 number.
• Oil - 2 tablespoons.
• Ginger (1 inch) - 1 small.
Method:
  • Take a pan and add cloves, cinnamon stick, coriander seeds, cumin seeds, garlic, ginger, pepper corns and dry roast it.
  • Take a mixie jar, add fried onions, turmeric powder, above dry roasted ingredients, sugar, soaked tamarind, salt, lime juice, red chili paste, tomato ketchup and blend into paste.
  • Slightly give gashes to king fish then coat it with blended paste and keep aside for 30-40 minutes.
  • Heat oil in a pan, add fish piece and shallow fry on both side until it becomes dark colour, transfer into serving plate.

Now fish riccardo is ready to serve.
