Ingredients used in Kadai Chilli Chicken
• Chicken - 500 grams.
• Coriander seeds - 1 tea spoon.
• Cardamom - 2 number.
• Bay leaf - 2 number.
• Peppercorns - 1 tea spoon.
• Cloves - 3 number.
• Star anise - 1 number.
• Cinnamon stick - 2 number.
• Red chilies - 3 number.
• Fennel seeds - 1 tea spoon.
• Fenugreek leaves - as required.
• Kasoori methi leaves - 1 tea spoon.
• Oil - as required.
• Ginger garlic paste - 1 tea spoon.
• Onions(chopped) - 1 number.
• Turmeric powder - 1/2 tea spoon.
• Mint leaves - 1 bunch.
• Green chilies (chopped) - 3 number.
• Coriander leaves (chopped) - 1 bunch.
Method:
  • Dry roast coriander seeds, whole garam masala spices (cardamom, bay leaf, peppercorns, cloves, star anise, cinnamon stick), red chilies.
  • Then add fennel seeds, fenugreek leaves, kasoori methi leaves and crush them to a coarse powder.
  • Heat oil in a pan, add chopped onion, ginger garlic paste, turmeric powder, chicken, and let it cook.
  • Once the chicken is half cooked, add tomato puree along with the seasoning of red chili powder and cook till oil oozes of it.
  • Later add mint leaves, chopped green chilies, onion and cook it well.
  • At last, sprinkle crushed masala powder along with coriander leaves and cook for 2 more minutes.

Delicious Kadai Chilli Chicken is now ready to serve.
