Ingredients used in Moroccan Couscous
• Couscous - 1.25 cups.
• Chick peas (kabuli chana) - 1 can.
• Onion - 1 number.
• Garlic - 1 clove.
• Tomato - 500 grams.
• Spinach - 1 bunch.
• Mushroom - 250 grams.
• Chili powder - half tea spoon.
• Vegtable broth - 1 can.
• Olive oil - 2 tablespoons.
• Salt - to taste.
Method:
  • Heat 1tbsp oil in a large sillet over medium-high heat. Add mushrooms, onion and garlic; cook 5 min.
  • Add tomatoes, spinach, salt, and pepper. Increase heat to high; cook 5 minutes or until tender, stirring often.
  • Meanwhile, mix vegetable broth with enough water to measure 2 cups. Place in saucepan and bring to a boil.
  • Addcouscous. Cover and remove from heat; let stand 5 minutes.
  • Now add chick peas into vegetable mixture; heat through.
  • Once couscous is done, add remaining 1 Tbs. olive oil, fluff with fork, and addvegtables.
