Ingredients used in No Cheese Pizza
• Onion (roasted and sliced) - 1 number.
• Canned or fresh tomato puree - 1 cup.
• Dried thyme - 1 cup.
• Fresh basil (chopped) - 1 tea spoon.
• Fresh parsley (chopped) - 1 tea spoon.
• Dried oregano - 1 tea spoon.
• Garlic (minced) - 1 tea spoon.
• Black pepper powder - 1 tea spoon.
• Eggplant (oven roasted) - 1 number.
• Zucchini (sliced ) - 1 number.
• Yellow squash (sliced) - 1 number.
• Plum tomatoes - 2 numbers.
• Sugar - half tea spoon.
• Salt - 1 tea spoon.
Method:
  • Preheat the oven to 450 degrees.
  • In a large bowl, combine onions, tomato puree, thyme, basil, parsley, oregano, garlic, pepper, salt, and sugar and stir to combine.
  • Spread the mixture over the crust.
  • Chop the flesh of the roasted eggplant and spread over the sauce. Layer the zucchini, yellow squash, plum tomatoes and basil over the eggplant.
  • Bake the pizza for 20 to 25 minutes or until the crust is golden brown.
