A bhaji, bhajji or bajji, is a spicy Indian snack or entree dish similar to a fritter, with several variants. Outside the Indian states of Maharashtra, Andhra Pradesh, Tamil Nadu, and Karnataka, such preparations are often known as pakor.

Ingredients used in Onion Bhaji
• Egg - 1 number.
• Garlic - 4 cloves.
• Sliced onion - 4 numbers.
• Bking soda - 1 tea spoon.
• All-purpose flour (maida) - h cup.
• Chickpea flour (besan) - 3/4 cup.
• Red chili powder - 1 tea spoon.
• Water - as required.
• Oil - to fry.
• Salt - to taste.
Method:
  • In a bowl, sift the chickpea flour, plain flour, baking sodaand red chilli powder. Then add egg, water and stir to make a smooth creamy batter, by adding a little more water if necessary.
  • Add onion and garlic and mix well.
  • Heat the oil, in a frying pan. Drop in tablespoons of the mixture at a time and press into patties. Fry the bhajis on both sides until golden brown and cooked throughly.
  • Drain on paper towels to absorb any extra oil.

Serve hot with chutney.
