DHABA STYLE MIX VEG CHUTNEY

Ingredients used in DHABA STYLE MIX VEG CHUTNEY
• Mustard oil - (1-2) tablespoons.
• Cumin seeds - 1/4 tea spoon.
• Kalonji / onion seeds - 1/4 tea spoon.
• Green chilies - 5 numbers.
• Raw mango - 1 number.
• Carrot - (1-2) numbers.
• Mustard powder - 1 tea spoon.
• Red chilli powder - 1-1/2 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Dry red chilies (break into 2 halves) - 2-3 numbers.
• Lemon pieces(soaked in salt water) - 4-6 numbers.
• Lime juice - 1/2 cup.
• Fennel seeds - 1/2 tea spoon.
• Coriander seeds - 1/2 tea spoon.
• Salt - to taste.
• Vinegar - 1 tablespoon.
Method:
  • In a glass, add lemon slices, salt, lime juice and keep aside.
  • Heat mustard oil in a pan then add cumin seeds, kalonji, saute it and allow it rest.
  • Cut slices of carrot, raw mango into lengths and keep aside.
  • Take a bowl, add green chilies, raw mango, carrot, little salt, mustard powder, red chili powder, turmeric powder, dry red chilies, lemon piece along with soaked juice (as required).
  • Crush fennel seeds, coriander seeds with pestle, later transfer it to the above bowl and mix it.
  • To it add vinegar, above prepared tempering and mix it. Finally keep aside for 3-4 days to absorb juices.

Dhaba style mix veg chutney is now ready to serve.
