Ingredients used in Rai Wali Bhindi
• Bhindi / okra (chopped) - 250 grams.
• Sugar - half tea spoon.
• Turmeric powder - 1 tea spoon.
• Green chilies (chopped) - 2 number.
• Onions ( chopped) - 1 number.
• Onion seeds (kalonji) - 1 tea spoon.
• Mustard oil - 1 tablespoon.
• Cumin powder - 1 tea spoon.
• Chili powder - half tablespoon.
• Yellow mustard paste - 1 & half tablespoons.
• Salt - to taste.
• Oil - as required.
• Coriander powder - 1 tablespoon.
• Coriander leaves (chopped) - 1 bunch.
Method:
First deep fry the okras and keep it aside. Take a bowl, add water, coriander powder, cumin powder, chili powder, yellow mustard paste, mix it well. Heat mustard oil in a pan till it gets to smoky flavor, add kalonji, chopped onions and cook it till onions are light brown in color. Then add green chilies, turmeric powder, sugar and saute it for a minute. Pour the above prepared paste on the top of the caramelised onions along with salt and cook for some more time. Add fried okra, mix it well and cook it with closed lid for about 2 minutes then switch off the flame. Delicious Rai Wali Bhindi Awesome Mustard Okra is now ready to serve.
