Ingredients used in RAJU GARI KODI PULAO
• Ghee - 2 teaspoons.
• Shallots - 125 grams.
• Cardamom - 1 number.
• Cloves - 1 number.
• Cinnamon - 1 stick.
• Bay leaf - 1 number.
• Shajeera - 1/2 tea spoon.
• Onions(slices) - 1 number.
• Ginger garlic paste - 1 tea spoon.
• Green chili paste - 1 tea spoon.
• Chicken - 500 grams.
• Salt - to taste.
• Basmati rice - 250 grams.
• Water - 500 ml.
• Curd - 2 tea spoon.
• Chopped coriander leaves - 1/2 bunch.
• Chopped mint - 1/2 bunch.
• Garam masala - 1 pinch.
• Boiled eggs - 2 numbers.
• Butter - 2 teaspoons.
• Cashewnuts - 1 tablespoon.
• Onions, green chillies, slice of lemon(garnising) - 1-2 numbers.
Method:
  • Take melted ghee in a pressure cooker and add peeled shallots, cardamom, cloves, cinnamon, bay leaf, shahi jeera, thickly sliced onions and saute it.
  • After a 1 minute add ginger garlic paste, green chili paste and saute it well.
  • Then add the chicken on high flame and mix it, now add salt, soaked basmati rice, water, curd, chopped coriander leaves, chopped mint, a pinch of garam masala powder and mix it well then let it cook with the lid on it.
  • Cook till 2 whistles at high flame and then keep it aside.
  • For garnishing now take butter in hot pan and add boiled eggs to saute it.
  • Meanwhile just open the cooker to check the chicken and stir it before serving on a plate.
  • In a hot pan with melted butter add cashews and toss it, then garnish with sauteed eggs, onions, green chilies, aslice of lemon and cashews.
