STICKY DATE PUDDING

Ingredients used in STICKY DATE PUDDING
• Water - 200 ml.
• Dates(de seeded) - 120 grams.
• Butter - 60 grams.
• Castor sugar - 120 grams.
• Eggs - 1 number.
• Vanilla essence - 1 tea spoon.
• All purpose flour - 200 grams.
• Icing sugar - 1/4 cup.
• Lemon juice - 2 teaspoons.
• Baking soda - 1 pinch.
• Sugar balls, colorful sprinklers, mint leaf(to garnish) - 1 tablespoon.
Method:
  • In a hot pan heat water first then add dates.
  • Once it starts boiling switch off the flame, add baking soda to it and keep it aside.
  • For the pudding mixture take unsalted butter in a bowl to cream it first.
  • Once the fluffy butter is ready add castor sugar and mix it thoroughly.
  • Now add beaten egg to it and mix it well, to cut down the raw smell add vanilla essence and mix it constantly.
  • To this we will add all purpose flour and mix it well so that flour is incorporated in that.
  • Now to this cake mixture we will add boiled dates mixture all together and mix it nicely.
  • Then with a spoon start transferring the mixture into small muffin molds but don’t fill it completely.
  • Place all the muffin molds in a tray and add some water in the tray till it is half covered.
  • Bake them in preheated oven at 180 degrees for 15-20 minutes.
  • Once they are cooled d-mold them.
  • For the sauce now take icing sugar in a bowl and add lemon juice slowly to it and mix it well.
  • Now just add this batter on these puddings at top and garnish with some sugar balls or any colorful sprinklers with mint leaf.
