STUFFED VEGETABLES WITH RICE

Ingredients used in STUFFED VEGETABLES WITH RICE
• Zucchini - 2 pieces.
• Tomato - 2 numbers.
• Eggplant - 2 numbers.
• Oil - 3 tablespoons.
• Garlic(finely chopped) - 1 tea spoon.
• Onions(finely chopped) - 1/4 cup.
• Salt - to taste.
• Carrots(finely chopped) - 1/4 cup.
• Beans(finely chopped) - 1/4 cup.
• Coriander powder - 1/2 tea spoon.
• Cumin powder - 1/4 tea spoon.
• Red chili powder - 1/2 tea spoon.
• Tomato puree - 2 tablespoons.
• Cooked rice - 1 cup.
• Pepper crush - 1 tea spoon.
• Coriander leaves(chopped) - 1/2 bunch.
• Turmeric powder - 1/4 tea spoon.
Method:
  • Scoop inside portion of zucchini, tomato, eggplant and keep in a plate.
  • Place eggplant in hot water so that peel become soft and keep in the same plate.
  • Heat 1 tablespoon oil in a pan and add garlic, onions, salt, carrots, beans and saute it.
  • Add coriander powder, cumin powder, Red chili powder, tomato puree, little water and saute it.
  • Add cooked rice and saute it. Later add coriander leaves and mix it.
  • In a bowl add oil, salt, pepper crush and mix it and coat this mixture inside and outside of scooped vegetables with brush.
  • Stuff the rice mixture inside scooped vegetables.
  • Heat 1 tablespoon oil in a pan and add stuffed vegetable and pour little water at bottom and place lid and cook it.

Now transfer into a plate and serve it hot.
